4/18 Photo- Beef and Broccoli

Sorry for the lack of photos the past few days- haven't really been on a photo taking spree.

This one is from a while back- I think we had Stacia over at our house for dinner and decided to make some beef and broccoli, since we had both on hand.


For all you folks out there wanting to try this recipe at home- we got this recipe out of our Chinese cookbooks that we got from my uncle in Taiwan. It is a series of cookbooks called Pei Mei's Chinese Cookbook Vol I-III that has the recipe in both English and Chinese and they have some really great recipes. So here it is (slightly adjusted for my tastes- you can make more sauce or add more ginger/green onions if you want):

Ingredients for Dish
1 lb of beef
1 head of broccoli
1/2 onion (or whole onion if you like onion a lot! I love it so I put more in!)
Green onion
Garlic
Ginger
Oil

Ingredients for Beef Marinade
1 tsp sugar
2 tbs soy sauce
1/2 tsp baking soda
3 tsp cornstarch
2 tbs water

Ingredients for Seasoning Sauce
1 tbs soy sauce
4 tbs oyster sauce
2 tsp sugar
1/2 tsp cornstarch

Directions
1. Slice beef across the grain into square/rectangular slices. Place in bowl. Add the beef marinade, and then add 1 tbsp oil. Mix well and marinate for minimum 1/2 hour
2. In a small bowl, mix the seasoning sauce
3. Cut the broccoli and boil in water for about 1 minute. Drain.
4. Slice onion, chop 3-4 pieces of green onion (more if you want), chop finely the garlic
4. Heat the oil in a frying pan. Stir fry beef until cooked. Remove the beef. Heat additional oil in the same pan and stir fry green onions, garlic, onion, and ginger (I grate about a tsp). Add the broccoli and stir fry for 1/2 minute. Add the beef and then pour in the seasoning sauce. Stir quickly on high heat until mixed well. Remove to a platter and serve hot.

This makes enough serving for about 4 people. Serve with rice (of course!). And yes, all of these ingredients are available to us in Ecuador (though I do use Oyster Sauce that I brought from the U.S., but you can purchase the Oriental brand in the Supermaxi here).

I would like to make this dish. Do you use vegetable oil? Also, can I use ground ginger or does it have to be fresh? Lastly, how much garlic to you add?

I would use fresh ginger root- I think that you can buy it at the regular supermarket in the loose veggies section so you don't have to buy a ton.

I probably put in about one clove of garlic, minced. And I use vegetable oil, but you could probably use olive or sunflower oil.

mmmm, this looks good. I'll have to try it. I have a slightly different recipe for broccoli beef that didn't turn out very well because the beef had a 'strange' flavor. But I think that the marinade should do the trick.
